ABOUT

Carolyn, Peggy and Joanne Goldwater founded Goldwater's Foods in 1989. Peggy had just sold her salad dressing company and Joanne and Carolyn wanted to package their salsa recipes. The rest is history! Sisters, Joanne and Peggy are the daughters of the late Senator Barry Goldwater. Carolyn is Joanne's daughter and grandaughter of the Senator.

Rio Verde Chicken Enchiladas2 chicken breasts cooked & shredded 1 cup chopped onion 3 tablespoons grated Parmesan cheese 1 cup shredded Jack cheese 1 jar Rio Verde Tomatillo Salsa2 cups whipping cream or 2% milk 4 eggs or egg substitute 8 corn tortillas2 cups shredded cheddar cheese Oil for fryingDirections: In a skillet, heat oil and dip each tortilla in, frying quickly just until soft.Combine chicken, onion, Parmesan and Jack cheese. Roll chicken mixture in tortillas, placing seam side down in a medium baking dish. Blend Rio VerdeTomatillo Salsa, whipping cream and eggs. Cover tortillas with sauce and sprinkle with cheddar cheese.Bake for 30 minutes at 350°.Makes 8 enchiladas.

Medium sized BrieParadise Pineapple Salsa 3 1.5 oz. cream cheese mixed1 teaspoon chili powder. Top with toasted walnuts Directions Fiesta Brie Slice medium sized Brie in half horizontally. Scoop out Brie from bottom half to make a shallow saucer.Spoon Paradise Pineapple Salsa onto bottom half. Replace top inserting toothpicks to hold together. Spread lightly with 3 1.5 oz. cream cheese mixed with 1 teaspoon chili powder. Top with toasted walnuts (optional). Place on a microwave safe serving dish. Microwave for 35 seconds or until soft to touch.Mohave Mango Salsa or Papago Peach Salsa can be substituted in this recipe.

mango black bean and basmati salad

1 1/3 cup basmati rice 1 sweet potato peeled and chopped to ¼" dice 2 tbsp. tomato paste 1 ¼ cup Goldwater's Mohave Mango Salsa 1 15 ounce can black beans, rinsed and drained 1 stalk celery, sliced on the diagonal 2 scallions, sliced on the diagonal Kosher salt DirectionsThe black and orange colors in this nutritious, low fat salad are perfect for fall.Cook rice according to the package instructions.Cook the sweet potato in salted water until fork tender, about 8-10 minutes.Whisk together the tomato paste and salsa. Toss this dressing with the beans, rice, celery , scallions and sweet potato.Season to taste with salt. Yields: 4-6 servings.
4 eggs 1 can (15 oz) refried beans 1 can (4 oz) diced green chiles 4 corn tortillas ¼ cup vegetable oil 1 jar Sedona Red Salsa4 oz grated jack cheese Directions Heat the oil and cook the tortillas one at a time for only a few seconds. Drain on paper towels. Heat beans with diced green chiles and a little salsa. Spread on tortillas. Cook eggs the way you like them, then place on top of each tortilla. Cover with salsa and sprinkle with cheese. Serve immediately. Serves 4.
4 ripe avocados, mashed ½ jar Rio Verde Tomatillo Salsa 1 small onion, diced fine 1 clove garlic minced Juice of 1 lime or ½ lemon Salt and pepper to taste Directions Combine all ingredients and mix well. Chill for 2 hours covered. Serve with chips or vegetables. Makes about 4 cups.
